Battlefield Outdoors is a great place to rent kayaks and bikes and learn about hiking in the area.  We’ve kayaked West Chickamauga Creek – depending on time of year they offer full service rental with drop off and pickup and will also provide dropoff & pickup with your own gear.  Very affordable and helpful.
